Garden Potato Salad with Cornichons & Parsley
A classic with a garden-fresh twist—this potato salad is packed with flavour from homegrown veg, punchy cornichons, and a mustardy mayo dressing. Perfect for BBQs, picnics, or just a sunny lunch in the garden.
Ingredients:
A good bowlful of homegrown potatoes, scrubbed (no need to peel)
A handful of fresh parsley, finely chopped
3–4 cornichons (small gherkins), chopped small
3 heaped tablespoons mayonnaise
1 generous teaspoon coarse grain mustard
Salt and freshly ground black pepper, to taste
Method:
Boil the potatoes Scrub your homegrown potatoes and place them in a pan of salted water. Bring to the boil and simmer gently until just tender (around 15–20 minutes depending on size). Drain and leave to cool completely.
Make the dressing In a separate bowl, mix together the mayonnaise and coarse grain mustard. Add the chopped cornichons and parsley. Stir well and season with salt and black pepper to taste.
Combine it all Once the potatoes are cool, cut any larger ones into bite-sized pieces. Gently fold them into the dressing, taking care not to mash them.
Chill before serving Cover and refrigerate for at least an hour to let the flavours mingle. Serve cold,
