Banana & Coconut Bread: A Cozy Classic with a Tropical Twist

There’s something special about sneaking a quiet moment in the garden (or my polytunnel), cup of tea in hand, and a slice of something homemade to enjoy.
This banana and coconut bread has become one of my absolute favourites for exactly that kind of pause in the day.
It’s the kind of bake I find myself making again and again, partly because it’s so comforting, and partly because I can almost convince myself it’s not too unhealthy… I mean, it’s got fruit in it, right?
The combination of sweet, ripe bananas and soft coconut gives it a lovely moist texture, with just enough warmth from the mixed spice to make it feel properly comforting. Whether I’m taking five minutes outside among the plants or sitting down for a slower afternoon break, this is always the slice I reach for.

I also love adding a sprinkle of demerara sugar on top before baking. It gives that slightly crunchy finish, which makes it feel a bit more special (and honestly, I’ll take any excuse for a crunchy topping).
And don’t rush the creaming stage, it really does make a difference to the final texture.

The Recipe
Serves: 8–10Time: 1 hour 10 minutes
Ingredients
125g butter, softened
240g light brown sugar
2 large eggs
2 ripe bananas, mashed
125ml milk
175g plain flour
1 tsp baking powder
75g desiccated coconut
A pinch of salt
½ tsp mixed spice
Method
Preheat the oven to 180°C / 350°F / gas mark 4. Line a cake tin with greaseproof paper.
Cream the butter and sugar together until light and fluffy, then beat in the eggs one at a time.
Stir in the mashed banana and milk. Fold in the flour, baking powder, coconut, salt and mixed spice. Mix until smooth, then pour into the prepared tin.
Bake for about an hour, or until a skewer inserted into the middle comes out clean. If needed, give it a little longer.
Slice and enjoy,preferably with a cup of tea.
